Yoshi's Banana Toast: My fave Breakfast/Snack of all time

I'm not sure if blogging about food really fits into my reading blog aesthetic, but hey this always gets me excited to get up in the morning (wow I'm such a grandma) so I had to share!! I started making this in early 2016- if 15 year old me could make it, so can you. 100% vegan, healthy, and easy to whip up. Here's the recipe (if you can have a recipe for toast?)



Ingredients:

- 2 slices of toast (wholegrain I think works best)

- 1 banana

- Creamy peanut butter; preferably unsalted, non-sugar (almond butter works too!)

- Maple Syrup

- Optional: A pinch of cinnamon - don't overdo this one, or else you can't taste anything else. Trust me


Method:

1. Toast the bread. Sometimes when I don't have time I skip this bit.

2. While toasting, cut up your banana into slices (about 0.7mm?)

3. Spread peanut butter on one side of each toast slice

4. Place your banana slices on top of the peanut butter. If you want you can make them into flower shapes etc. :) If you have banana left over, you can eat it or make another slice of toast.

5. Drizzle a bit of maple syrup and sprinkle a bit of cinnamon as desired


You can also only put the bananas, maple syrup, and cinnamon on one side and put the bread slices together to make a quick to-go sandwich.


Optional: adding in-season berries (blackberries, blueberries, strawberries, raspberries, etc) adds more flavor and nutrients. Adding chia seeds apparently adds omega-3 fatty acids (which reduces bad cholesterol!), antioxidants, fiber, iron, and calcium. If adding chia seeds I wouldn't add cinnamon.
